The first time making it seemed like a long process because I babied it and stirred the whole time but now I know you walk away for a bit and just let the sauce reduce on its own and it will be fine.
Here is how to do it:
The Ingredients:
- 1/2 cup mirin
-1/4 cup sake or rice wine
-1/4 cup soy sauce
-2 Tablespoons sugar
*These ingredients can be easily found at local Asian supermarket.
Pour all ingredients in a small pan. At this point the consistency of the mixture should be like coffee or water. Put the pan on low to medium low heat for 25 minutes checking back only occasionally.
After 25 minutes check the consistnency. It should be
thick like a syrup.
Here is how it should coat a spoon. At this point take it off the heat and let cool for 10 minutes.
After letting the sauce cool for a bit. Drizzle over rice, meat and vegetables and enjoy! =)
I used to eat tokyo joes when I lived in colorado, we had one right next door to the salon I worked at. Since then I've moved all over and haven't seen a t.j.. but I really miss the terriaky sauce! I'm gonna try your recipe.
